MINESTRONE ALLA CALABRESE!
RECIPE:
1 Prepare the Battuto in a food processor: 5 slices of raw ham, a handful of fresh parsley, 1 small stalk of celery, 1 small carrot, 10 cloves of garlic, a handful of basil leaves. Turn on the food processor to make a pasta that becomes fragrant.
2 Chop summer vegetables all the same size (less than 1/2 inch): green beans, green courgettes, yellow squash, white beans, pinto beans, spinach, tomatoes (in quarters) and 2 cans of cream of corn. You can vary the quantity or substitute the vegetables you prefer or their availability.
3 Put 4 tablespoons of olive oil in a large pot and brown the Battuto over low heat. Add 11/2 liters of hot water and bring to a boil. Add the above vegetables.
4 If you want to add a small pasta, I recommend cooking it separately and adding it when the soup is served. Adding it to the soup while cooking makes the soup cloudy.
5 After boiling, simmer the soup for a maximum of 15 minutes and turn off the heat. The soup will continue to cook on its own without the vegetables turning to mush (especially if you reheat it afterwards).
6 When the soup cools to serving temperature, serve with grated Parmesan. Serve on pasta if desired ??
